Follow up inspection.
- Prep cooler under microwave (at end of kitchen) - is now only used for storage of low risk foods that do not require refrigeration. Only use to store higher risk foods if temperature is at 4C / 40 F or colder.
- Walk in cooler - air temperature during inspection is 4C or colder. If door is open and this results in higher food temperatures, recommend plastic strips (check with refrigeration expert).
- Staff on site and Manager both have valid Food Safe (or equivalent) certificates.
- Food Safety Plan is being updated. Include corrective actions. Keep daily temperature records.
- Previously discussed food safety plan for mussels.
- Continue to follow a routine cleaning schedule.
