Hot holding - refried beans, all others in hot water bath - are at 60 C or hotter. - good.
Reviewed cooling procedures - good (cooled in ice water bath (60-20 C in 2 hours or less and 20 - 4 C in 4 hours or less).
Foods that are reheated for hot holding are reheated quickly on stove.
Hand washing sinks have liquid soap and paper towels.
Premises is clean and well-organized. Routine cleaning is being done.
