Observation (CORRECTED DURING INSPECTION): Pre-Cooked, cooled and ready to fry. braided chicken was observed stored in room temperature. Operator moved and stored the chicken tray to walk-in cooler at the time of inspection. Proper storage for high hazard food was discussed.

Observation: Frozen chicken "mary" observed in 3-comp sink thawing out but not under running water. Proper thawing procedure discussed.
Corrective Action(s): Ensure to thaw chikens under running water. Utilize only one sink at the time as there is only one tap. Ensure to change the water frequently during thawing time.

Routine inspection

- Hand Hand washing stations are supplied with hot/cold running water, liquid soap and paper towels in dispenser.
- Front counter cooler measured at 4C or colder.
- Walk-in cooler measured at 4C or colder. Raw chicken noted stored in labeled containers in walk-in cooler. Cooked chicken separated from raw properly and covered.Food in line and prep coolers measured at or below 4C.
- Freezer measured at -18C or colder.
- Gravy in Hot holding unit maintained temperature at or above 60C.
- Dishwasher registered at 73 C on dish surface. 2-compartment sink maintained.
- Sanitizer QUAT measured @200-400 ppm available in dispenser. QUAT sanitizer available in spray bottles. Wiping cloths in kitchen and cook line are to be stored in the QUAT sani buckets or get changed every 4 hours.
- Floor noted clean and maintained. Please maintain floor free of food debris under equipment.
- No pest activity noted at this date. Pest is managed by a pest control company.
- General sanitation is satisfactory.
- Customer washroom maintained.
