Observation (CORRECTED DURING INSPECTION): Grilled pork in hot holding tray at temperatures less than 60 degrees Celsius. Temperatures of 47 degrees Celsius observed. Staff had placed pork in two inserts which does not allow for heat to transfer to second insert. CORRECTED DURING INSPECTION - Item reheated on grill to 72 degrees Celsius.
