Observation (CORRECTED DURING INSPECTION): Ecolab sink and surface sanitizer tested too low-due it it getting diluted with hot water.
Corrective Action(s): Do not add any water to the dispensed sanitizer from the Sink and Surface sanitizer dispenser. Please check with Ecolab re: the ideal temperature for dispensing sink and surface sanitizer. The sanitizer from the dispenser tested 700 ppm. Good.

Routine inspection of the kitchen and bar:
Kitchen:
* Recommended storing fish above the raw meats and raw poultry items in the walk-in cooler.
* Do not store oysters intended for raw consumption underneath any raw meats to prevent cross contamination.
* Recommended storing dressings/condiments containers immersed in ice-water mixture.

Walk-in cooler registered 2-3 degrees C.
Walk-in freezer < -18 C.
Preparation coolers across from the cook line < 4 degrees C.
Dry storage area clean and well organized.
Liquid soap and paper towels available at all hand wash stations.
Dishwasher final rinse temperature: 166 F.Good.
Hot holding of gravy>60 C.
Food handling practices satisfactory.
General sanitation is very good.

Bar:
Bar washer sanitizer tested: 100 ppm chlorine at the glass surface.
Bar coolers below 4 C
Liquid soap and paper towels available at the hand sink.
Temperature and sanitizer logs are up to date.

*Note: Discussed recalling the affected lots of oysters in the light of the recall.
Please ensure to check the recall notification detail from Fisheries department re: which batches/lots
of oysters are safe to consume. Our office received report of one suspect food borne illness associated with
consumption of raw oysters on March 12th. According to the head chef, oysters from the implicated lots have been discarded.
