Observation (CORRECTED DURING INSPECTION): Cut vegetables and shredded cheese stored in the upper part of the pizza prep cooler had surface temperature measured at 7.6'C-8.0'C and internal temperature measured at 5.2'C. Operator had adjusted the temperature for the cooler at this time.
Corrective Action(s): Ensure to have the cooler temperature set at the current temperature (36'F). Otherwise, each food item stored in the upper part of the cooler should have a lid and kept closed after each use.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/under required temperature of 4'C; Freezers operating under required temperature of -18'C.
-Thermometers available for temperature monitoring.
-200ppm chlorine solution available in a bucket to hold wiping cloths and in 3 comp sink at this time.
-Low temperature dishwasher achieved minimum level of chlorine (50ppm) at plate level after final rinse.
-General food storage practice satisfactory, except mentioned above.
-Ventilation canopy hood serviced and maintained.
-Traps in place. Professional pest control company contracted for biweekly visits.
-No evidence of pest activity observed at this time.
-Washroom handsink satisfactory.

General sanitation of the facility good throughout. However, the wall behind the storage shelf in the walk-in cooler requires better cleaning as discussed at this time.
