Winery kitchen will also be used to prepare foods for catered events.
Some updates to the kitchen area include addition of soup kettle and a new commercial
natural gas stove and griddle.

1. You must get the commercial fume hood specifications certified by a mechanical engineer and approved by the Fire department prior to installing.
2. Ensure to provide hot/cold running water for cleaning the soup kettle.
3. Update the food safety plan/sanitation plan and the SOPs to reflect catered menu items and send copies to our office for review.
4. Hot and cold food temperatures must be monitored and recorded on a daily basis.

Upright cooler < 4 degrees C.
Stainless steel cooler below 4 C.
Stainless steel freezers ranged from -10 to -19 degrees C.
Dishwasher final rinse temperature registered 75 C.
Liquid soap and paper towels available at the hand sink.
Hot holding of corn pizza > 60 C.
General sanitation is satisfactory.


New serving area has been build on the right hand side of the waffle station.
-Foods to be served from this area include: pre-packaged ice cream sold from the freezer and
pre-packaged juices and Kombucha tea (dispensed in glasses by staff)
-No blending of smoothies or other food preparation permitted from this Shed servery
*A hand wash station is required.
* Ensure kombucha is obtained from approved sources and kombucha keg is kept refrigerated
at or below 4 C.

Waffle station:
* Ensure the glass door above counter cooler maintains the bottled milk etc at 4 C or below.
Preparation cooler below 4 C.
