-Follow-up inspection to April 17, 2020.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing). Ensure staff test the chlorine sanitizer concentration on a daily basis to verify a minimum of 50ppm chlorine is being delivered.
-Bleach sanitizer pail was at 100ppm.
-Prep cooler was serviced by a technician and was at 4C. Technician advised operator to keep the cooler closed when not in use. Continue to monitor the cooler and contact service as needed.
-Potato press sanitation has improved. Small amounts of food debris found on the blade. Ensure staff properly clean and sanitize all equipment after each use.
