Comments

- Handsink in the front is maintained with hot & cold running water, liquid soap & paper towel
- QUAT sanitizer available. QUAT concentration was at 400ppm. Dilute down the solution to 200ppm.
- Low temp dishwasher produced 50ppm chlorine at plate's surface
- Prep coolers and upright coolers maintained <4C
- Operator noted that they are renovating the 3 compartment sink area.
- Have the screen at the back door closed at all times.
