Observation (CORRECTED DURING INSPECTION): At the time of inspection the only quats spray bottle was 0ppm quats in concentration.
Corrective Action(s): As discussed in the previous inspection ensure an approved food contact surface sanitizer solution is prepared and available for use. Follow manufacturers instruction on the dilution of the bulk quats. Ensure a 200ppm quats or 100ppm chlorine sanitizer solution is available for use at all times.

Observation (CORRECTED DURING INSPECTION): Staff washroom hand sink paper towel dispenser empty. Serving area hand sink paper towel dispenser also empty. Bar hand sink paper towel dispenser not mounted and no paper towels or liquid soap available for use.
Corrective Action(s): Ensure all hand sinks are provided with liquid soap and paper towels at all times.

Observation: Scoops left in dry products, rice cooker, dosa batter, and several food containers in the walk in cooler not adequatley covered.
Corrective Action(s): Ensure all food products are protected from contamination.

Correct immediately.

Observation: Flies observed in the dish washing area, some areas of the kitchen, and in part of the dining area.
Corrective Action(s): Contact a pest control company to address the fly issue in the building. Start with a thorough cleaning of the dish washing area. Clean underneath and behind all shelves and the dishwasher. Eliminate all standing water. Install a screen door for the back door.

Observation:
Thorough cleaning required in the dishwashing area.
Thorough cleaning required of the exhaust canopy.
Thorough cleaning required of the fan cover in the walk in cooler.
Corrective Action(s): Thoroughly clean the above noted area. Correct by July 15, 2022.

Observation: At the time of inspection no staff on duty has FOODSAFE level 1 or equivalent. Head chef who arrived at the end of the inspection certificate has expired.
Corrective Action(s): Ensure in the absence of the operator at least one staff on duty has FOODSAFE level 1 or equivalent. Send additional staff to take FOODSAFE level 1 or equivalent. Correct by September 1, 2022.

Routine inspection:

Note: bar glass washer again registering 0ppm chlorine during the final rinse cycle. Advised by manager on duty this glass washer is not used. If no longer required remove from the premise.

Dishwasher registers 50ppm chlorine during the final rinse cycle.
Walk in cooler at or below 4 degrees C.
Walk in freezer at -14 degrees C.
Hot holding above 60 degrees C.
Preparation cooler inserts and drawer sections at or below 4 degrees C.
No buffet at the time of inspection. Buffets occur on the weekends.
After correction 200ppm quats available for use.
