Comments

- Temperature Control: Monitoring is required to be conducted by all departments.
- Manual Dishwashing: Ensure all food contact surfaces and implements are being washed and disinfected after use or on a timely manner.. 4 Step Method. All implements are to be stored in a sanitary manner. Ensure all staff are properly trained. Corporate policies are to be followed.
-> Wiping cloth storage: Use 200 ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Pallet/stock rotation discussed. Monitoring of all expiration (Best Before) dates are required. Rear storage areas are to be kept clean and organized. Ensure regular cleaning of all "hard to reach" areas - behind/under equipment and shelving, etc.
- Chemical storage: Ok.
- Sanitary Facilities: Ok.
- Staff hygiene: Reviewed.
- Sanitation: Clean floors routinely especially underneath and behind all equipment. Reduce all clutter and any unused items within all departments. Increased sanitation is part of an effective rodent control program.
- Bulk Water dispensing self serve unit and Coffee Grinder is to be cleaned on a regular basis.
- Equipment: All items and surfaces are to be kept in good repair. Any damaged items are to be removed from use.
- Garbage, Recycling and Composting Storage: Compactor/Cardboard recycling areas are to be kept clean and organized at all times.
- Pest Control: An active pest control program is currently in place. Records reviewed. Refer to "Sanitation Notes." All areas are to be kept clean and organized. Items are to be kept stored off of floors.
