Observation (CORRECTED DURING INSPECTION): Vegetable chopper had food debris on it and was not used today.
Corrective Action(s): Ensure equipment and utensils are thoroughly cleaned (washed and rinsed), then sanitized and air dried after each use to protect food from potential cross contamination.

Observation (CORRECTED DURING INSPECTION): No food contact surface sanitizer available during inspection.
Corrective Action(s): A bleach water sanitizer at a concentration of 100 ppm chlorine bleach was prepared in a bucket with a wiping cloth. Food contact surface sanitizer must be available for use at all times during operations, and must be maintained at the correct concentration required for safe and effective sanitizing of food contact surfaces (for example, 100 to 200 ppm chlorine bleach or 200 ppm quats). Counters/surfaces sanitized at time of inspection.

Observation (CORRECTED DURING INSPECTION): 1. Bag of onions stored directly on floor.
2. Non-foodgrade bag (garbage bag) used for storage of chili containers.
3. Lettuce in one bag is starting to show signs of decay.
Corrective Action(s): Above-noted violations corrected. Ensure food is stored off the floor to protect from potential contamination. Garbage bags are not intended for food storage and may contain odour suppressing chemicals and other chemicals that can contaminate food. Ensure food is free from signs of spoilage. Monitor and discard items that have signs of spoilage. Discussed stock rotation, ordering, and labeling/dating product.

Observation (CORRECTED DURING INSPECTION): Two spray bottles with faded writing were located in the washroom. Staff unsure if bottles contained sanitizer or another substance. Unable to detect sanitizer (bleach water at 100 to 200 ppm, quats at 200 to 400 ppm) in either of the bottles.
Corrective Action(s): Contents discarded. Ensure all chemicals are properly labeled to identify contents to prevent accidental contamination.

Observation: No thermometer available within both prep coolers.

Warewashing sink supplied with hot and cold running water and sink plugs. Bleach water sanitizer prepared in sanitizing compartment and measured 100 ppm chlorine.
Equipment and utensils stored in clean condition.* *One exception--corrected during inspection.
General sanitation satisfactory.
No signs of pest activity observed.
Note: One of the staff members on site stated they have valid FOODSAFE Level 1, but did not have a copy of the certificate or temporary certificate at the time of inspection. To be verified at follow up inspection.
