Observation (CORRECTED DURING INSPECTION): No food safe sanitizer prepared during inspection.
Corrective Action(s): Staff was shown how to make a 100 ppm chlorine solution by using 1 tsp of bleach to 1 litre of water. All food contact surfaces were wiped with 100 ppm of chlorine solution. Ensure a bleach solution is prepared at all times at 100 ppm to ensure all food contact surfaces are properly sanitized.

Observation: 1. Hand sink in front area not functioning. Operator has contacted repair technician.
2. No paper towels available in hand washing sink in preparation area.

1. Repair hand sink in front area immediately.
2. Ensure all hand sinks are stocked with soap and paper towel at all times.

Observation (CORRECTED DURING INSPECTION): 1. Food contact surfaces being cleaned with multi-surface cleaner.
2. Bins of grated mozza cheese observed uncovered in walk-in cooler.
3. Pizza boxes stored directly on floor in storage area.
Corrective Action(s): To protect surfaces from biological, chemical, and physical contamination:
1. All food contact surfaces were cleaned and sanitized with chlorine solution. Staff was educated on site. Ensure food safe sanitizer is used on all food contact surfaces.
3. Ensure all food and food contact surfaces are stored at least 6 inches off the floor.
2. Ensure all food, not in the process of cooling, is covered.

Corrections Needed:
- Submit updated Food Safety Plan, updated floor plan, and Sanitation Plan to the undersigned by June 4, 2021.
- Enroll staff in FoodSafe Level 1 or its equivalent and send proof of enrollment to undersigned.
- Have oven vents serviced and cleaned.
- Have paper towel dispenser relocated in preparation area away from stove and closer to large compartment sinks.
- Install a soap dispenser at the two-compartment sink.
- Remove the large pot indicated during the inspection as it does not fit in the two-compartment sink.

Observations During Inspection:

- Premises maintained in satisfactory condition
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding units not in use during this time
- Back door closed during inspection
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Vegetable choppers in good sanitary condition
- Dough mixer and dough rollers good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
- Hand washing observed during inspection
