Observation: Accumulation of food debris observed on the vegetable presser.
Corrective Action(s): Clean and sanitize the sanitize the vegetable presser. Take it apart for proper cleaning and sanitizing. Operator stated he will purchase a new presser. Correct by: immediately.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher dispensed less than 50 ppm chlorine sanitizer. At least 50 ppm is required for proper sanitizing of utensils and food contact surfaces.
Corrective Action(s): Manually sanitize all utensils and plates. Set up the sanitizing compartment at the 2 compartment sink. Dishwasher can be used for wash and rinse ONLY.

Observation (CORRECTED DURING INSPECTION): The paper towel dispenser for 2 hand washing stations located in the kitchen were empty.
Corrective Action(s): Operator replaced new rolls of paper towel for both aforementioned paper towel dispenser. Ensure hand washing stations are always supplied with paper towels.

- Freezers (stand-up, chest) maintained at -18C or less.
- Hand washing stations provided with hot/cold running water.
- 100 ppm chlorine sanitizer available in pails with wiping clothes stored inside.
- Food products stored off the ground and covered.
- Temperature records maintained for the walk-in cooler only. Ensure to maintain a temperature record for all refrigeration units on a daily basis.
- General sanitation satisfactory.
- No pest activities observed at the time of the inspection.
- Permit was posted at a visible location to the public.
