Follow up inspection with Manager, Culinary Services.
Reviewed cooking, cooling, reheating procedures.
Dishwasher wash water and final rinse water gauges appear to be working (temperatures satisfactory/ 71C measured inside of the machine and >82C/180F at the final rinse water gauge). Final rinse temperature gauge was replaced.
Keep accurate temperature records for dishwasher.
Stand pipe for prep sink on order. Reviewed defrosting procedures.
Large 2 door cooler - temperature is ok (4C/40F). There is a thermometer on the outside of this cooler but recommend a thermometer inside of cooler as this thermometer is broken.
Check this cooler more often throughout day and verify that both the inside and outside indicating thermometers are accurate.
