209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Severely dented can was found in the walk-in cooler.
2) Opened can of tomato sauce was stored in the walk-in cooler.
3) Onions were stored on the floor.
Corrective Action(s): 1) The safety of severely dented cans cannot be verified. Food item was discarded at the time of inspection.
2) Discontinue the practice of stored foods in opened metal cans to prevent potential contamination of foods. Canned foods must be transferred into a food grade container with proper contamination. Sauce was discarded at the time of inspection.
3) Foods must be stored off the ground and protected from potential contamination. Onions were relocated at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Pail of fish was thawing in a bucket of water in the kitchen. Fish was at 5C.
Corrective Action(s): Frozen foods must be thawed under cold running water or in a cooler at 4C. Fish was moved to the walk-in cooler at the time of inspection.

Observation: Rodent droppings were observed throughout the facility.
Corrective Action(s): Clean and sanitize all areas affected by rodent droppings. Contact you pest control operator to mitigate infestation.

Observation: Back door has a space allowing for potential pest entry.
Corrective Action(s): Install a sweep or barrier to prevent potential entry of pests into the facility.

Observation: Bleach sanitizer containers were not labelled.
Corrective Action(s): Ensure all chemicals are properly labelled to identify their contents in order to prevent accidental mixing and/or misuse. Check containers regularly and relabel as needed.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Front sweets cooler was at 4C.
-Chest freezers in the kitchen were at -18C to -21C.
-Kitchen upright freezers (new) were at -17C.
-Dry storage area freezers (3) were at -17C/-31C.
-Cooked potentially hazardous foods cooled in the chest freezers. Sauces were in the walk-in cooler at less than 4C.
-High temperature dishwasher had a final rinse temperature of 77C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash station supplied with hot and cold running water, liquid hand soap and single use paper towels. Both operators observed practicing good hand hygiene practices at the time of inspection (hands were washed after picking debris off the floor and moving the trash container).
-Bleach sanitizer tested at 100ppm to 200ppm.
-Potato dicer was in use at the time of inspection.
-Sweets by the cash register area covered and protected from potential contamination.
-Food dyes were labelled for use in foods.
-Did not observe any used single use bags on-site for reuse.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 equivalence valid until August 08, 2028
