Observation (CORRECTED DURING INSPECTION): < 10 PPM chlorine residual detected in the bleach sanitizer container in the cooking area.
Corrective Action(s): **Issue corrected at the time of inspection** Operator discarded the sanitizer solution and remade the solution. 200 PPM chlorine residual was detected in the new solution prepared.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Noted 2 containers of raw meat stored on the floor in the walk-in cooler.
2. Inappropriate dispenser, bowl, being used to dispense bulk condiment in the cooking area. Bowl was also stored in the bulk condiment container.
Corrective Action(s): 1. Placed the raw meat on the shelves, below produce/ cooked and ready-to-eat food in the walk-in cooler. Food should not be placed on the floor, especially they were noted uncovered, to prevent debris/ dirt/ contamination being kicked into the containers of raw meat.

2. Operator removed the bowl from the bulk condiment. Use an appropriate dispenser, with a handle, and store in a way where the handle does not contact the food.

Observation: Debris noted in the following areas:
1. Black buildup on the head of the dish sink sprayer.
2. Grimy residuals noted on the wire racks above the 2-compartment sink.
3. Black buildup noted in the mop sink.
4. Dried on food soil noted in the upright freezers (shelves and liners) by both washrooms.
5. Some mouse droppings noted on the shelf holding the flours.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time after cleaning.
After cleaning the mouse droppings, monitor the area for new droppings.

Observation: Cardboards still noted being used in the cooking area and in freezer as liners.
Corrective Action(s): **Note: This is a repeated violation** All cardboards used as liners on the floor or in the freezer units must be removed off the premises. Operator must ensure all surfaces in the food preparation and storage areas are imprevious to moisture and easily cleanable. Cardboards are not an option.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units noted at 4C or less.
All freezer units noted at -18C or less.
Good overall storage practice and proper storage hierarchy observed.
Hot hold units were holding hot food above 60C - great job in switching over the rice cookers, no issues in holding rice over 60C.
All in-use utensils noted in a sanitary condition.
Bleach sanitizer container in the dishwashing area was noted with 200 PPM chlorine residual.
High temperature dish machine was able to reach 71.7C at the plate level during the rinse cycle.
