Observation (CORRECTED DURING INSPECTION): Observed baked food items (containing eggs and dairy) stored at 10.2C. The food items were prepared and baked roughly 4 hours prior to inspection.
Corrective Action(s): The operator discarded the food items. Ensure that all cold potentially food items are stored < or = 4C at all times.

Observation (CORRECTED DURING INSPECTION): 1) Observed cinnamon buns stored directly on top of a shelving rack without proper trays.
2) Observed opened food items (i.e. flour, shortening) uncovered and in their original packaging.
Corrective Action(s): 1) Store food items on trays to prevent contaminating the food.
2) Store all opened food items in pest proof containers with proper lids.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Observed the front, middle display cooler at 17C. Most food items stored inside are not potentially hazardous. The operator informed that the cooler fluctuates in temperature.
Corrective Action(s): Fix and/or replace the display cooler and ensure that it can maintain < or = 4C. Monitor the cooler daily with a thermometer and do not store any cold potentially hazardous food items (i.e. containing eggs, dairy) in the meantime. Start a daily temperature log for all coolers and keep up to date and available for review. The operator was given a temperature log template sheet. Date to be corrected: Today.

Observation: 1) Observed missing ceiling tiles directly above the three compartment sink. The operator informed that there was a recent leak due to a broken water pipe. No food items were contaminated. All equipment, utensils, and other food contact surfaces were washed and sanitized with bleach solution.
2) There is lack of adequate lighting above the three compartment sink area.
Corrective Action(s): 1) Replace missing ceiling covers. Date to be corrected: March 20, 2017.
2) Install wall mounted lighting or other methods of lighting. Date to be corrected: 6 months.

- General sanitation is satisfactory.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers < or = to 4C
- All freezers < or = to -18C
- Three compartment sink available for manual dishwashing. Sanitizer was available at 100 ppm chlorine. Ensure to follow the proper dishwashing procedure: 1) Wash, 2) Rinse, 3) Sanitize, 4) Air Dry.
- Surface sanitizer was available in spray bottles at 100 ppm chlorine sanitizer.
- Baking equipment and storage bins are cleaned, washed, and sanitized with cloth and sanitizer in spray bottles daily/weekly.
- Dry storage area is good.
- No signs of pest activity during inspection.
