Observation (CORRECTED DURING INSPECTION): Disposal bin used for discarded paper towels was observed stored on the space behind the upper lid component of the prep. cooler at the time of inspection.
Corrective Action(s): Discontinue this practice of storing the disposal bin behind the upper lid component of the prep. cooler. Staff member re-located the disposal bin to the floor near the handsink and away from the upper component of the prep. cooler during the inspection.

Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer spray bottles were not labelled to identify the contents.
Corrective Action(s): Ensure sanitizing agents are properly labelled to identify the contents. Staff added labels to the chlorine sanitizer spray bottles to identify the contents during the inspection.

Comments

Handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels.
At the time of inspection, separate staff member was processing transactions at the cash register/point of sale system while separate food handlers prepared the beverages.
Both rinse sinks were operational.
Prep. cooler and upright cooler were at or below 4 degrees C and were equipped with thermometers.
Both chest freezers were at or below -18 degrees C.
Temperature records were being maintained for refrigeration units.
Time-tracking stamps were in place for pearls. Pearls are held at ambient temperature for 4 hours maximum prior to being discarded according to staff.
100 ppm chlorine sanitizer was available inside both spray bottles.
3-compartment sink was supplied with hot and cold running water and it was equipped with three drain plugs. Household bleach was stored on the floor below the 3-compartment sink area.
Manual ware-washing was not occurring at the time of inspection. Manual wash, rinse, sanitize (by fully immersing preparation utensils into 100 ppm chlorine sanitizer - 1/2 teaspoon household bleach per L of water), and air dry method was reviewed with staff. Reminder: Ensure in-use preparation utensils (e.g. jugs, scoops, etc.) are washed, rinsed, sanitized, and air dried at least every 4 hours between use, whenever subject to possible contamination, and after final use each day.
No signs of recent pest activity were present at the time of inspection.
Dry goods were observed stored off the floor.
Food storage areas, ice machine, and ice bin were in a clean condition. Scoops were stored separately from the ice.
In the absence of the Operator, staff member with valid FOODSAFE Level 1 equivalent course training (Probe it Food Safety course, issue date: January 27, 2021) was present on shift.
Permit to operate was posted in a conspicuous location.
