Observation (CORRECTED DURING INSPECTION): Line cooler ambient air temperature at 13 C. Feta cheese at 9.9 C and beef shawarma at 15 C.
Staff stated the steak shawarma was placed in the cooler about 1 hour ago.
Corrective Action(s): Steak shawarma was re-located to walk-in cooler.
This cooler can be used to store potentially hazardous foods for a maximum of 2 hours after which they must be relocated.
If potentially hazardous foods are stored in this cooler for 4 hours, they must be discarded after.
Place time stickers/use a timer.

Observation: Handwashing sink not equipped with hot water
Corrective Action(s): Adjust valve that controls hot water so that hot water is always available.
Handwashing sink must be equipped with hot and cold running water, liquid soap and single-use towels at all times.
Correct immediately. In the interim use another sink for handwashing.

Observation: Flies observed within premise.
Corrective Action(s): Ensure premises is free of pests at all times. Consult pest control company.

Observation: 1. Line cooler ambient air temperature at 13 C. Second line cooler also not functioning and not in use.
2. Third compartment of 3 compartment sink is leaking and therefore unavailable for dishwashing.
Corrective Action(s): 1. Cooler temperature was adjusted at the time of inspection however the temperature did not drop at the end of the inspection. Please repair coolers immediately.
2. Discussed with staff how to manually wash dishes using only 2 compartments (wash and rinse in one compartment and then sanitize in the second compartment) until dishwasher is repaired OR clean out back storage area and use the 3 compartment sink in that area.

Routine Inspection
Walk in cooler at 4 C or below. Kept in a clean and organized condition.
Hot holding of rice and gravy is 60 C or above.
Meats have a secondary cook step on the grill - good.
Ice machine in a clean condition.
Quats in spray bottle - the solution was too strong. Please ensure solution is made as per the manufacturer's instructions (only 200 ppm quats required) - please re-fill all the bottles with fresh solution.

**Back storage area, closet, and staff washroom is very cluttered. Ensure items that are not required for the operation of the premises are removed and area is de-cluttered after construction is done.

Reminder - clean behind cooking equipment and hard to reach areas daily to prevent build up of grease and debris.
