Observation (CORRECTED DURING INSPECTION): Large 2 door cooler air and food temperature are above 4C/40F (food temperature range 42 - 49F).
Corrective Action(s): Cooler thermostat was adjusted again during inspection. Temperature now 2.7C. Monitor daily (new thermometers now available for each fridge).
Potentially hazardous foods are to be stored at 4 C/40F or colder. Cooling cooked foods also is to be done quickly. Store cooked fried foods in fridge at 4C (let steam escape/store in small volumes as discussed).

Observation (CORRECTED DURING INSPECTION): Dishwasher was run and chlorine concentration was 0ppm after the final rinse. Chlorine bottle was empty.
Corrective Action(s): Chlorine bottle was replaced during inspection and the chlorine concentration after the final rinse, measured on utensil inside the machine, was >>300ppm. Use your test strips and verify daily that the automatic final chlorine rinse for the dishwasher is at least 50 ppm (50-100ppm). This must be achieved for each run.
