Observation (CORRECTED DURING INSPECTION): 1. Observed an unopened box of paneer at room temperature by the hand washing station at the end of the kitchen
2. Observed a crate of chutney sauces at room temperature by the front service area
3. A jug of milk left at room temperature.
Corrective Action(s): All cold potentially hazardous foods must be stored at 4 C or lower when not in use. All products were transferred to the walk-in cooler at the time of inspection.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. High temperature dishwasher not being used and left unattended for a long time. Residue build up noted inside the dishwasher
2. Drying rack above the two compartment sink had grease accumulation
3. Utensils stored in an unsanitary crate below a small prep table
Corrective Action(s): Required operator to clean and sanitize all items noted above. Operator must find a location to store clean utensils, protected from all contamination. Operator is to clean and sanitize all utensils mentioned above. Dishwasher must be cleaned and sanitized thoroughly.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Observed staff cleaning a wok at the time of inspection. Staff scrubbed the wok with soap and rinsed it off but skipped the sanitizing step. The dishwasher was not in use at the time of inspection. When inquired, they just did manual ware washing in the two compartment sink. Although staff verbally explained the proper steps of manual ware washing, the process was not being followed
Corrective Action(s): Required operator to clean and sanitize the wok properly, including the sanitizing cycle. Ensure to clean the dishwasher and start using it as per initial sanitation plan provided

Observation: Two hand washing stations were not available for use at the time of inspection. The one closest to the front service area had no running water. The one next to the dishwashing area was turned off due to broken faucet. Operator indicated that these were noted and a plumber was called for service, unsure when he/she will be coming to fix them.
Corrective Action(s): Required operator to use the other hand washing station down at the end of the kitchen. Ensure to have the broken sinks repaird as soon as possible.

Observation: 1. A few items in the walk-in cooler not properly covered
2. Ceiling tiles had dust accumulated
3. Two light covers underneath the ventilation hood are missing
Corrective Action(s): Required to provide proper covers for all foods being stored. Ceiling tiles are to be cleaned so that dust does not contaminate food. Light covers to be provided underneath the ventilation hood.

Observation (CORRECTED DURING INSPECTION): A box of paneer being thawed at room temperature
Corrective Action(s): Required operator to transfer the box into the walk-in cooler. All thawing must take under refrigeration temperature of 4 C or lower. The box was moved to the walk-in cooler at the time of inspection.

Observation: Observed plastic wrap for the stainless steel wall lining behind cooking equipment.
Corrective Action(s): Required operator to remove them as they are fire hazards as well as hindrance to cleaning.
