Observation: Drain flies noted throughout the kitchen.
Corrective Action(s): A pest control company is coming on site once a month and treating the drains.
a) Increase the pest control frequency to twice a month and provide the next two invoices to Fraser Health. Business card left on site.
b) Install the UV light in the back that is unplugged. Consider implementing other measures to control the flies as well, such as installing UV lights in the front area.
c) Ensure that fly strips are kept outside of food prep areas. Discussed with the cook on site.

Comments

All coolers were < 4 C.
All freezers were < -18 C.
Quats sanitizer solution was at 200 ppm.
Hand sinks supplied with hot and cold water, soap and paper towels.
Ice machine was clean.
Fume hoods were clean.
Dishwasher final rinse cycle reached 74 C at the plate level. Ensure that the dishwasher is checked daily. It should reach minimum 71 C at the plate level or 82 C at the manifold.
