Routine inspection
Kitchen:
Hand washing sink supplied with hot cold running water, Soap and paper towel.
- Sink and surface sanitizer available and tested
- Low temp dish washer final rinse detected with 50-100 ppm chlorine. Ensure monitor the final rinse water temperature daily. Detergent and rinse aid available. Implements on dry rack sorted and organized.
- Walk in cooler measured at 4C or colder. Raw - Cooked food separation observed. Food labeled and covered properly. Ensure monitoring log is kept updated.
- Line cooler measured at or below 4C and temp. monitoring log maintained and kept updated.
- Freezers measured at -18C or colder.
- Under counter coolers were at or below 4C
- Lamb Sous- vide procedure discussed. FSP available to follow. Cooling process discussed with chef.
- Hood exhaust grid has some grease build-ups. Ensure to clean and maintain.
- Dirty and clean cloths separation observed.
Sanitizer available.
Bar:
Hand washing maintained. Recommended to install a permanent paper towel dispenser near HW sink in the bar.
Ice maker observed clean and ice scoop stored in sanitary condition outside of the ice bucket.
Prep sink maintained. Ice well observed to be clean.
