Observation (CORRECTED DURING INSPECTION): Staff observed washing dishes by hand with soap and water during inspection and placing dishes in air drying area. Staff was educated to clean and sanitize dishes using the 3-compartment sink, soap and water and bleach solution during inspection. Dishwashing signage was provided to staff during inspection.
Corrective Action(s): Clean and sanitize dishes in the 3-compartment sink with soap and water and bleach sanitizer solution at a concentration of 100 ppm chlorine to remove grease and food debris and to prevent contamination of food.

Observation (CORRECTED DURING INSPECTION): Hand washing station at front service area is not supplied with paper towel during inspection.Staff placed paper towel in the dispenser during inspection.
Corrective Action(s): Ensure all hand washing stations are supplied with hot and cold running water, liquid soap and paper towel to promote good hand hygiene and to prevent potential contamination of food.

Observation: Back area has been altered to include two commercial bakery ovens, large dough mixer, and cookie shaping machine. Some cookies observed produced on site in containers but not for sale yet. Staff has explained that the cookies are currently under testing and are not being sold to the public yet.
Corrective Action(s): Submit updated plans to the health inspector for review prior to selling any cookies to customers. Once plan are submitted and reviewed, an inspection will be scheduled to grant health approval at that time. Failure to submit plans may result in progressive enforcement action.

Observation (CORRECTED DURING INSPECTION): [REPEAT] Bag of red onions, kidney beans and flour observed stored directly on the floor. Staff placed all the bags on a shelf during inspection.
Corrective Action(s): Store all foods covered and stored at least 6 inches off the floor at all times to prevent potential contamination of food.

Observation: New menu item is observed being produced on site (cookies). Staff stated that the cookies are being tested and are not currently being sold to the public.
Corrective Action(s): Submit updated food safety plan to the health inspector for review prior to producing and selling any new foods items.

Observation: Multiple house flies observed on site during inspection. One sticky fly trap observed placed next to the 2-compartment dishwashing sink.
Corrective Action(s): House flies carry contaminants and can contaminate food. Place more sticky fly traps in non-food preparation areas to remove current fly population. Keep all doors and windows closed at all times. Keep all food covered.

Observation (CORRECTED DURING INSPECTION): Front door observed propped open. Staff closed the door during time of inspection.
Corrective Action(s): Keep all windows and doors closed at all times to prevent fly and other pest entry on site. Store all food covered to prevent potential contamination of food.

Observation: Vinyl back splash behind mop sink has been removed. A small piece of wood is observed rotting behind the mop sink. Exposed dry wall is also observed directly behind the mop sink.
Corrective Action(s): Replace the vinyl back splash behind the mop sink to ensure the area is non-porous, smooth and easy to clean and disinfect (as per approved plans).

- Hot-holding unit measured above 60'C
- Chest and stand-up freezers measured at or below -18'C
- Temperature logs are maintained as per approved food safety plan - good!
- General sanitation of premise is satisfactory
- Hand washing stations in staff washroom and in back food preparation area are supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in labelled spray bottles (X3) measured at 200 ppm chlorine concentration during inspection
- 3-compartment sink available with drain plugs
- FOODSAFE Level 1 trained staff available on site
- Health operating permit posted in a conspicuous location on site

Notes:
- Pending updated plans from the operator in regards to change of menu to be submitted by Oct 25, 2022 (addition of cookies and baking area at the back of the premise)
- Follow-up inspection to be conducted on November 9, 2022
