Observation (CORRECTED DURING INSPECTION): 1 gallon bucket of uncooked chicken pieces was by the grill, 18-20 degrees Celsius internal temperature.
Chef indicates that the chicken was accidentally left in the hot holding area for a while before being moved to grill area. Do not leave cold perishable foods in a warm space; remove from fridge just before cooking. Chicken was discarded.
