Observation (CORRECTED DURING INSPECTION): Observed walk-in dairy cooler to be at an ambient air temperature of 15C.
Corrective Action(s): Technician arrived on site during inspection. Products removed from walk-in dairy cooler and pulled from shelfs by operator. Product to be tested in house and reprocessed into ice cream, if testing satisfactory and/or discarded.
Ensure unit is capable of maintaining a temperature of 4C or below.

Ensure gaskets on walk-in cooler are replaced/fixed to allow for a proper seal when doors are closed.
