Observation (CORRECTED DURING INSPECTION): 0ppm chlorine during the final rinse cycle for the low temperature dishwasher.
Corrective Action(s): Ensure all dishes/utensils are washed, rinsed, then sanitized to 50ppm chlorine during the final rinse cycle of the low temperature dishwasher.

Dishwasher to be serviced immediately. In the interim, dishes and utensils to be washed, rinsed, then sanitized in 100ppm bleach for 2 minutes at the 2 comparment sink then air dryed.

Observation (CORRECTED DURING INSPECTION): At the time of inspection designated hand sink obstructed with a table. Paper towels dispenser empty. Advised by staff that hands are washed at the 2 compartment sink. No liquid soap available at the 2 compartment sink.
Corrective Action(s): Ensure the designated hand sink is clear of obstructions and easily accessible for staff.

Observation: The following observations were observed in the walk in cooler:
- uncovered foods.
- raw eggs stored above vegetables and other ready to eat foods
- food containers stored on the floor.

In the dry storage room, scoops and other dispensing utensils stored directly in dry products.
Corrective Action(s): Ensure all food is protected from contamination at all times. Cover food containers with tight fitting lids. Store at least 6" off the floor. Store all raw potentially hazardous food below ready to eat foods and vegetables. Store all scoops and other dispensing utensils outside of dry products. Correct immediately.

Observation: 0ppm chlorine during the final rinse cycle for the low temperature dishwasher. Leak also observed from the unit.
Corrective Action(s): Service the dishwasher immediately. Ensure the low temperature dishwasher is in good working order and sanitizing dishes/utensils at 50ppm chlorine during the final rinse cycle.

Routine inspection:

Premise is now restricted to take out and single use items only. Banquet side not in use at this time.
2 compartment sink adequately setup for manual warewashing.
Followup inspection required.

Walk in cooler at or below 4 degrees C.
Freezers at -14 to -17 degrees C. Wood's freezer requires defrosting.
No hot holding at buffet at time of inspection. Buffet is only used for parties at the banquet side.
Preparation coolers inserts and lower section at or below 4 degrees C.
Beverage cooler at 1 degrees C.
After correction 100ppm bleach sanitizer solution available for use.
Front area under the counter cooler not in use.
Permit posted in front area.

Note: monitor and record temperatures of all coolers, freezers, and final rinse chlorine concentration for dishwasher.
