Observation (CORRECTED DURING INSPECTION): Manual warewashing sanitizing sink had no detectable chlorine sanitizer. Staff were using pH and Quats test strips for chlorine.
Corrective Action(s): Chlorine at 100ppm is required for proper sanitizing of equipment and utensils. Staff prepared 100ppm bleach at the time of inspection and re-sanitized items washed this morning. Obtain test strips for testing choline to verify proper disinfectant concentration.

Comments

-Walk-in cooler was at 3C.
-Pita prep cooler was at 4C (top and bottom).
-Under grill cooler was at 3C.
-Smoothie cooler was at 4C.
-Upright freezer was at -12C.
-Chest freezer was at -18C.
-Smoothie freezer was at -18C.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Sanitizer pail in the front area properly labelled and tested at 200ppm.
-Food stored off the floor and covered. 1 mouldy tomato was found in the walk-in cooler - ensure staff properly rotate food supplies and remove any mouldy items.
-Canned items in the dry storage area in good condition.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
*FoodSafe Level 1 certificates without an expiry date expire on July 29, 2018. To recertify, staff must either successfully complete a FoodSafe Level 1 or online refresher course (foodsafe.ca)
