Sales: Prepackaged nonperishable items, prepackaged perishable items, slushy and soft ice cream dispensing.

- Temperature control: Monitoring required. Gauges noted. Cooler temperatures are to be maintained at or below 4 C. Freezers are to be maintained at or below -18 C.
- Manual dishwashing: 2 compartment sink. (4 Step Method - sign posted.)
-> Ensure all food contact surfaces are washed/disinfected after use or on a timely manner. Sanitize concentrations posted on 4 Step Dishwasher sign. "Stera Sheen" (chlorine) based sanitizer. Follow manufacturers directions.
-> Ice scoop storage discussed for "hard ice" cream dispensing.
-> Soft serve ice cream machine/slushy machine cleaning reviewed. Cleaning procedures to be followed as per manufacturers directions. (Located on the side of the ice cream machine).
- Sanitary Facilities: Ok. Liquid soap/single use towels in dispenser noted at service hand sink..
- Sanitation: Routine cleaning is to be conducted. Ensure drip trays, etc are being cleaned on a regular basis. Walk in cooler is to be kept clean and organized. Any/all unused unwanted items are to be removed to free up space. Any spills are to be cleaned up asap.
- Staff hygiene: Ensure all staff routinely wash hands.
- Food storage: Stock rotation discussed. Monitor 'outdated/expired' food items - remove from display. Candy: Covered bins/tongs utilized. Make effort to store all items 6" off of floor.
- Structurally: Ok.
- Garbage Storage: Ensure all items are kept stored in covered containers.
- Pest Control: Monitoring for any rodent/insect activity required daily.

- Ice purchased for sale. Not made at facility.
- All unused items (ie: photo copier/hard ice cream freezer) are to be removed to free up space.
