Observation: 1) Operator was not using an approved food contact sanitizer to sanitize food contact surface. Corrected during inspection: Operator made a 200ppm chlorine bleach solution during inspection.
2) Operator does not use a sanitizing step when warewashing.
3) No drain plugs are available for ware washing
Corrective Action(s): 1) Ensure to have food contact sanitizer available at all times.
2) Operator was given instructions and signage on how to make sanitizing solution for warewashing. Operator was also given chlorine test strips to test for adequate sanitizer solution. Operator must ensure to use santizing step when warewashing.
3) Operator to provide adequately sized drain plugs for 2 compartment sink for warewashing purposes
