Observation (CORRECTED DURING INSPECTION): Six packages of hummus (565g each), labeled "keep refrigerated" were observed to be stored in malfunctioning cooler. Internal food temperature: 10 degrees C. Hummus stored overnight, per operator.
Corrective Action(s): Discarded. Ensure that cold potentially hazardous foods are maintained at 4 degrees C or less to limit the growth of potential pathogens.

Observation: Glass door cooler was measured at 10 degrees C (lowest temperature measured). Operator stated cooler was found to be malfunctioning as of this morning, and a service technician has already been called.
Note: Minimal food storage in cooler. High acid items such as pickles, as well as sealed, non-perishable beverages stored in cooler at time of inspection.
Corrective Action(s): Ensure cooler is serviced so that it is in good working order and is capable of maintaining foods at 4 degrees C or less. Until such time, do not store potentially hazardous food items in cooler. Date to be corrected by: Today.

Routine health inspection conducted.
- Preparation cooler at 4 degrees C or less (above and below).
- Other coolers on site (e.g. display cooler) used for non-potentially hazardous food storage only - e.g. non-perishable beverages such as soda. No concerns with storage space at time of inspection.
- Freezer satisfactory.
- Hot holding internal food temperature (rice) at 60 degrees C or more.
- Thermometers available for cold holding units. Probe thermometer on site for internal food temperature checks.
- No cooking of raw meats; reheating only.
- Food is stored off the floor.
- Hand sink supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Non-latex gloves available.
- Bleach water sanitizer available in labeled spray bottle and in bucket with wiping cloth at 100 ppm chlorine.
- Three compartment sink available for manual ware washing. Hot/cold running water, detergent, bleach, and sink plugs available. Reviewed manual ware washing procedures. 100 to 200 ppm chlorine sanitizing solution prepared in third compartment.
- General sanitation good. No signs of pest activity at time of inspection.
