Labelled spray bottle measured >400 ppm QUATS
Dilute QUATS solution to make 200 ppm QUATS
Handwash stations all equipped with liquid soap, paper towels and hot/cold running water.
Right side prep cooler inserts measured 6.3C internally; contains shrimp. Close prep cooler cover when not in use to keep cold potentially hazardous foods <4C. Bottom prep cooler at 3.4C
Left side prep cooler and inserts 3.2C to 4.3C
Upright freezer at -18C
Walkin cooler at 1.2C; walk in freezer at -20C
Ice machine is clean and scoop is stored in clean container.
Front servery upright cooler at 3.6C
Front servery under the counter cooler at 2.3C
High temperature dishwasher measured 74.0C at plate level.
Temperature logs are maintained. Dishwasher temperature is being kept as well - good
