Observation (CORRECTED DURING INSPECTION): Cut fish were in a pan observed sitting on top of the ice in the ice display. Temperatures ranged between 9 and 11 degC.
Corrective Action(s): As discussed, these pans MUST be burried in ice with some ice in the pans as well to help maintain temperatures below 4 degC.

General Comments:
Coolers are maintained below 4 degC; foods in the inserts at the Poke Station were below 4 degC
Freezers are maintained below -18 degC
Rice temperature was 60 degC
Handsinks are fully equipped
200ppm Quats is available for sanitizing
Discussed dishwashing procedures. No concerns noted.
Temperature log for the Poke station is being maintained. ENSURE THAT COOLER TEMPERATURES FOR THE REST OF THE STORE ARE BEING RECORDED DAILY AS WELL.
Manager on duty has FS level 1 certification
Electrician to come in to upgrade electrical system due to overload issues at the the Poke Station.
REMINDER: Any renos/changes must be approved by Fraser Health.
