Observation (CORRECTED DURING INSPECTION): 1. No QUATS detected in sanitizer bucket storing wiping cloths. Employee stated that bucket was filled approximately an hour prior.
2. Rodent droppings and gnaw marks observed on food storage container lids (containers stored on shelf under food prep table).
Corrective Action(s): 1. Empty bucket and refill with 200 ppm QUATS. Use test strips to verify sanitizer concentration.
2. Wash and sanitize food storage container lids and containers.

304 - Premises not free of pests [s. 26(a)]
Observation: - Accumulation of rodent droppings observed in the following areas:
- Floor/ wall edges under prep tables, oven, grill, prep counters.
- Under upright beverage/ sandwich cooler and adjacent counter.
- On food storage shelves under prep counter (beside grill).
- Under shelves in dry storage room.
- At office desk (beside clean food equipment storage shelving).
- Rodent gnaw marks and droppings observed on lids of food storage bins.
- Rodents observed inside rodent traps in dry storage room.
Corrective Action(s): - Remove droppings and thoroughly clean above noted areas. Apply 100-200 ppm chlorine bleach solution (1 tsp chlorine bleach + 1 L water) to affected areas.
- Thoroughly clean the premises shortly after food production is complete for the day. Do not allow food debris and grease to accumulate for long periods as open food debris and grease will attract rodents to the area.
- Coordinate cleaning requirements with school administration/ custodian.
- Communicate and coordinate with pest control service technician and school administration/ custodian regarding implementing additional pest control measures.
- Identify cleaning requirements with school administration/ custodian.
- Ensure that all hard to reach areas (e.g. under/ behind/ between equipment and floor/ wall edges) are thoroughly cleaned.
- Remove all droppings so that employees and pest control service technician can monitor for new and/ or increased activity.

Note: Operations Manager (OM) on-site at time of inspection. OM stated that they are aware of problem and had reported rodent problem in dry storage room to school principal upon discovery. OM took corrective actions by removing all products from dry storage room. Food in dry storage room was stored in tight-lid food containers. Heavy accumulation of rodent droppings had be observed on food container lids (school had been closed for a week). Operator stated that food not affected as it had been stored in containers. Containers washed and sanitized, all dry storage items are currently stored in the walk-in cooler. Storage room empty at time of inspection.
**This is a temporary measure. Dry storage room is required for food operation. Address and correct rodent activity so that dry storage room can be used for its intended purposes. Food in storage must be protected from contamination at all times.

Observation: - Grease, dust, and food debris accumulation observed under and behind cooking equipment (oven, grill), and food prep table.
Corrective Action(s): - Thoroughly clean above noted areas and all other surfaces and hard to reach areas.
**Ensure all areas identified in Violation 304 is also cleaned.

- Coolers are maintaining acceptable temperatures (≤4C).
- Walk-In Freezer is maintaining an acceptable temperature (≤-18C).
- Hot Holding Equipment are maintaining acceptable temperatures (≥60C).
- 3-Compartment sink manual dishwashing and sanitizing procedures reviewed with employees. No concerns at this time.
