Observation (CORRECTED DURING INSPECTION): Kitchen hand washing station was obstructed by a food insert at the time of inspection.
Corrective Action(s): Food insert was removed. Ensure that at all times, hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper hand washing. Hand washing stations are designated for the purposes of hand washing only.

Observation (CORRECTED DURING INSPECTION): A pair of tongs were observed to be stored within a container of cooked noodles located within the reach-in cooler. This is a REPEAT violation.
Corrective Action(s): Tongs removed. Ensure that utensils such as tongs are not stored in food storage containers as the handles may potentially contaminate food.

Observation: High temperature dishwasher is unable to achieve 71 degrees C or more at the utensil surface.
Corrective Action(s): Ensure high temperature dishwasher is serviced so that it is capable of achieving the above-noted temperatures for proper sanitizing of utensils/dishware. Chlorine is being used as a sanitizer in the interim (50 ppm chlorine at utensil surface). Date to be corrected by: September 24, 2018.

Follow up to Rpt # MBEK-B3NU7S.

- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottles at 200 ppm
- No pooling liquid observed under bar glass washer. It was stated that leak was repaired.
- During the previous routine inspection, it was stated that the high temperature dishwasher was not meeting the minimum sanitizing temperature so a technician had fitted the dishwasher with liquid chlorine temporarily until a part could be delivered. During the follow up inspection (today) it was stated that the dishwasher booster had been repaired and the chlorine line had been removed; however, the dishwasher was not able to meet the required temperature of 71 degrees C and the feeder was still observed to be connected to chlorine sanitizer. A temperature of 67 to 68 degrees C and approximately 50 ppm chlorine was achieved at the utensil surface.
Follow up inspection to be conducted on September 24, 2018.
