Observation (CORRECTED DURING INSPECTION): In pizza prep cooler, small inserts were stored inside the large inserts. Both were used for storing pizza toppings and the bottom surface of the smaller insert was in direct contact with the food underneath that could result in potential food contamination. Staff moved the smaller inserts.
Corrective Action(s): Do not stack containers one on top of another unless the food underneath is properly covered. It is recommended to use 2x smaller inserts instead of smaller insert inside larger insert to prevent food contamination and adequate cooling of food.

Comments

Routine inspection conducted and the following observations were made:

Temperature (coolers to be at 4C or less, freezers at -18C):
- Walk in cooler at 2C
- All coolers were noted below 4C
- Freezers were recorded at or below -18C

Storage:
- All food items were stored at least 6" off the floor.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Low temp mechanical dishwasher used for dishwashing purposes. 50ppm chlorine residual measured at rinse cycle.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- 3 compartment dishwashing sink available for manual dishwashing.
- Handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- No grease/dirt build up observed on vents.

Pest Management:
- No signs of pest activity observed.
- Back door was properly closed.

Administrative:
- Operating permit was posted in a conspicuous location.
- In Operator's absence, staff has valid FoodSafe Level 1 certificate (Exp July 2027).

NOTE:
- Splash guard was observed on right side of handwash sink. Good.
- Shelving units have been put in place.
- Deep fryer has been removed offsite for deep cleaning and will be put back in place.
- Grill is not being in use and has been stored in storage room.
