Comments

Liquid soap, hot and cold running water, and paper towels were available at the handsink and at the 2-compartment sink.
Walk-in-cooler was 4 degrees C.
Upright freezer was at -22 degrees C (-18 degrees C or colder).
A temperature log was being maintained.
A 50 ppm chlorine residual was available at the plate after the dishwasher final rinse. Recommended: Obtain chlorine test strips to monitor the dishwasher final rinse chlorine residual on a daily basis/whenever the dishwasher is used.
200 ppm QUATS sanitizer was available in the spray bottles.
Food storage areas were clean and organized.

NOTE: The plastic covering over the plates on the trolleys is broken in some areas and will need to be replaced in the future.

Specific comments: Audited food items included: olive oil, dad's cookies, bread, and ceasar croutons ((0.2 g trans fat/1 g total fat))* 100% = 20% trans fat of total fat and hydrogenated soybean oil was an ingredient). The current no name brand of ceasar croutons exceeded the 5% trans fat restriction. Please discontinue use of this product and switch to another food product that meets the 5% trans fat restriction.
