Observation: 1. Dried food debris observed in the bowl of the dough mixer.
2. Growth of biofilm observed inside the ice well at the bar area.
Corrective Action(s): Clean and sanitize the aforementioned equipment and area. As for the ice well, discard all ice stored inside. Ensure food equipment and surfaces are maintained in sanitary conditions. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Quaternary ammonium sanitizer not available in buckets or spray bottles at the time.
Corrective Action(s): Staff dispensed 200 ppm quaternary ammonium sanitizer and sanitized all food contact surfaces in the kitchen. Ensure food sanitizer is readily available during operation at all times.

Observation: 1. Curries and food ingredients stored in the sandwich cooler and walk-in cooler were not covered.
2. Packaged raw meats stored beside raw vegetables in the walk-in cooler. Packages for the meats were intact and leaking of meat juices not observed. This has a high risk of contaminating the vegetable.
3. Open sauces of tin can were stored inside the original can.
Corrective Action(s): 1. Ensure food is covered with a food-grade barrier during storage to protect them from contamination.
2. Move the raw meats either under or away from ready-to-eat food like vegetables.
3. Transfer the food / sauce from tin can to a food-grade container when opened. Correct by: Immediately.

- Freezers (walk-in, chest, stand-up) maintained at -18C or less.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium sanitizer available from the dispenser.
- Low temperature dishwasher dispensed 100 ppm bleach sanitizer at the plate level.
- General sanitation satisfactory.
- No pest activities observed at the time.
- Staff did not have a copy of the FOODSAFE Level 1 certificate or equivalent to show at the time. This will be verified during the follow-up inspection.
