Observation (CORRECTED DURING INSPECTION): Hamburger steaks were stored over the counter and were around 20 degC. Manager said they were cooked an hour ago. These are slow cooked over the stove for almost an hour.
Corrective Action(s): Put the steaks inside the cooler after they've cooled down to room temperature (after an hour) as discussed.

Observation (CORRECTED DURING INSPECTION): Rice in the rice cooker beside the curry hotholding unit was 48 degC. Staff voluntarily discarded the rice.
Corrective Action(s): Rice must be hot held at or above 60 degC.

Observation: Mice droppings observed in the cupboard in the dining area; fruit flies noted in the back kitchen and front service area.
Corrective Action(s): As discussed, clean out the cupboard using bleach; place more fly traps in the back (don't place any above food items). Continue monitoring for mice. Service out a pest control company if required.

Observation: General cleaning required.
Corrective Action(s): Clean behind stoves and garbage bins, clean the outside of all the cooler, doors, etc.

Observation: The cook/warm button on the rice cooker beside the curry warmer wasn't working, the lid of the warmer was taped several times, there was a dent on the lid as well. When checked, the warmer wasn't working.
Corrective Action(s): Replace this rice cooker as discussed.

Comments

-Coolers are below 4 degC; food in the freezer are frozen
-Rice in all the other rice cookers is over 60 degC; sauce and curries are above 60 degC
-200ppm bleach is available for cleaning in a spray bottle.
-Dishwasher rinse temperature was 79 degC at plate level; hot water was available at the taps at 4:29pm.
-Handsink and washroom sinks were fully equipped.
