301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Inside of the ice machine had debris present inside of it at the time of inspection. Staff stated they drain and clean and sanitize the ice machine every two months.
Corrective Action(s): Drain the ice and clean and sanitize the inside surfaces of the ice machine in accordance with manufacturer's directions; Correct today. Clean and sanitize the ice machine more frequently in the future to maintain it in a clean condition.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handsink basin in the back food preparation and cooking area was observed blocked twice during the inspection with food containers. This is a repeat violation.
Corrective Action(s): Do not block the handsink. Ensure enough clearance is left around handsink to enable convenient access to the handsink for proper handwashing purposes.

104 - Permit not posted in a conspicuous location [s. 8(7)]
Observation: Permit to operate was not posted in a conspicuous location of the food service establishment. Staff were unsure where the permit to operate is located.
Corrective Action(s): Ensure the health permit to operate is posted in a conspicuous location of the food service establishment; Correct within 1 month. Fraser Health Operating replacement form was provided in case you are unable to locate the permit to operate (refer to this form for details).

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Dry sauces were observed stored in open metal cans.
2. Knives and spatulas were observed stored in the hard-to-reach gap between the 3-compartment sink and wall that cannot be properly cleaned and sanitized.
3. Shoes were observed stored next to covered dry goods on the lower shelving unit.
Corrective Action(s): 1. Staff transferred the contents of the metal cans into reusable washable food containers.
2. Staff stated the two knives were brought from her home for her personal use and stated she would take them home today. Staff placed the spatulas into the sink. Ensure they are washed and then stored in a clean location to protect them from potential contamination (e.g. clean magnetic strip).
3. Staff moved the dry goods to a different shelving unit. Do not store personal belongings next to food products.

304 - Premises not free of pests [s. 26(a)]
Observation: A small amount of rodent droppings were observed below the shelving units and next to the empty unplugged refrigeration unit in the back storage room. Staff reported they clean the floor in this area on a weekly basis when they receive new deliveries.
Corrective Action(s): Clean and disinfect the affected areas with bleach water and remove the rodent droppings; Correct today. Pest control technician was on-site during the inspection. Continue to monitor for signs of recent pest activity and integrated pest control measures.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Cardboard boxes were being used to line empty milk crates that were stacked up to store pots and pans.
Corrective Action(s): Discontinue use of cardboard boxes to line surfaces since they are not made of durable, easy to clean, and impermeable to moisture materials. Remove the cardboard liners today. Do not stack empty milk crates to create a shelf. Re-organize cooking and preparation utensils to store them on a durable, washable, and easy to clean shelving unit; Correct today.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Plastic shatterproof cover/light shield was missing over the light bulb in the walk-in-cooler.
Corrective Action(s): Ensure the light bulb inside the walk-in-cooler is encased in a shatterproof cover; Correct as soon as possible within 2 months.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: In Operator's absence, no staff on shift had valid FOODSAFE Level 1 or equivalent course training. One staff member reported having expired FOODSAFE Level 1 training. Second staff member also had an expired FOODSAFE Level 1 certificate (expiration date: July 29, 2018). This is a repeat violation.
Corrective Action(s): It was reviewed with staff in person and with the Operator over phone that in the Operator's absence, at least one staff member on duty must have valid FOODSAFE Level 1 or equivalent course training. Please have enough staff members retake the FOODSAFE Level 1 or equivalent course to fulfill this requirement and provide an update to the district Environmental Health Officer within 1 month from today.

Handsink in the front service area was supplied with liquid soap, hot and cold running water, and single-use paper towels.
Food is cooked in the back area to at least 74 degrees C prior to being placed in the front hot-holding unit as per staff.
Hot-held food in the front area was at or above 60 degrees C.
Walk-in-cooler and other three refrigeration units in use were at or below 4 degrees C.
Previously cooled food inside the walk-in-cooler was at or below 4 degrees C.
Chest freezer was at or below -18 degrees C in the storage room.
Upright refrigeration unit was unplugged and it was empty of cold potentially hazardous food in the storage room.
100 ppm chlorine sanitizer was available in a sanitizer pail.
3-compartment sink unit was supplied with hot and cold running water and drain plugs were available.
