Observation (CORRECTED DURING INSPECTION): Internal temperature of milk in under counter cooler registered at 7C and 9C, ambient air temperature of cooler registered at 7C. Potentially hazardous food stored above 4C can cause bacteria to grow more rapidly, leading to spoilage and foodborne related illnesses.
Corrective Action(s): Move all potentially hazardous foods to a working cooler. Adjust temperature setting on the cooler such that it can maintain 4C or lower. Monitor temperature of cooler. Service or repair unit if required.

Observation (CORRECTED DURING INSPECTION): 0ppm QUAT registered in sanitizer bottle and bucket. Additionally 0ppm QUAT registered at chemical dispnser. Without adequate sanitation, disease causing pathogens can grow on food contact surfaces and contaminate food products.
Corrective Action(s): In the interim use bleach as sanitizer, mix 1/2 teaspoon of unscented bleach with 1 litre water. Service Chemical dispenser such that it dispenses 200ppm QUAT solution. Use test strips to verify QUAT concentrations
