Observation: Product temperatures in the front display cooler, the front area under counter cooler, and the back area upright two-door cooler all measure 5 C to 10 C. Refrigerated food must measure below 4 C.
Corrective Action(s): Adjust the thermostats on all the reefer units so that food temperatures are always maintained below 4 C.

Observation: Baked goods are displayed uncovered on top of the front refrigerated display cooler at the customer service counter and are subject to contamination from coughs and sneezes from customers.
Corrective Action(s): Obtain hard-cover plastic display cases for the storage of these products and ensure that the products are protected from contamination as described above.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: The wood base under the dough mixer is unfinished and will absorb moisture from splashes and spills contributing to mould growth in the premises. All food contact surfaces,food handling equipment, and storage must be non-absorbant to moisture.
Corrective Action(s): Seal all surfaces of the wood base under the dough mixer with at least two coats of a washable oil-based paint or at least three coats of a water-proof clear-coat such as varnish.

Recent construction. Sanitation is very good. Freezer temperatures measure < -18 C. No hot-holding at the time of inspection. Wiping cloth sanitizer measures 200 ppm Cl. Bleach is available for use at the three compartment sink. All hand sinks are equipped with paper towel dispensers and liquid soap dispensers.
