Observation (CORRECTED DURING INSPECTION): Opened can of tomato sauce was stored in the walk-in cooler.
Corrective Action(s): Ensure all canned food items are transferred into food grade containers, once the can has been opened to prevent potential contamination of foods. Can of tomato sauce was transferred into a plastic insert at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Prep cooler door seals were found to be mouldy.
Corrective Action(s): Ensure all equipment is regularly cleaned and sanitized and is maintained in a clean and sanitary condition. Door seals were cleaned and disinfected at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom).
-Single door prep cooler was at 1C (top and bottom).
-Upright freezer was at -18C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Sink plug available and sanitizing solution made at the end of the night.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails were at 400ppm. Ensure Quats concentration does not exceed 400ppm - toxic for health.
-Meat slicer was disassembled at the time of inspection for cleaning and sanitizing.
-Foods stored off the ground.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until December 14, 2023.
