Observation: Observation: Multiple equipment in storage area has raw pieces of chicken on them. Cutting boards are also cleaned only with water throughout the day and sanitizer (bleach) at the end of the day.
Health rationale: Equipment used for chicken preparation (knives, plastic containers, meat slicers and cutting boards) not kept in a sanitary manner allow exponentially microbial growth and/or toxin population which can cause foodborne illness.
Corrective action: Adequately clean and sanitize all equipment throughout the day using 100 - 2-- ppm chlorine solution (bleach) in a sanitizer bottle (with labels) and/or using sanitizer buckets and wiping cloths, mix 1/2 - 1 teaspoon of bleach for every 1 litre of water. All utensils must be soaked in the 2-comparment sink in chlorine solution (after they are washed with soap and water) for at least 2 minutes at 100ppm concentration chlorine.

Observation (CORRECTED DURING INSPECTION): Observation: Spoons for dry spices placed directly inside spice containers.
Health rationale: Spoon handles could be potentially contaminated by food handlers hands and could cause foodborne illness.
Corrective action: Remove scoops/spoons from bins and place them outside the bins in a sanitary manner.

Observation: Observation: Cabinet door handles have dried up food debris on them.
Health rationale: Employees may touch food directly after and/or before touching the handles which can cause cross-contamination to food.
Corrective action: Ensure all handles and high-touch surfaces are cleaned frequently to reduce build up of food accumulation and ensure employees are washing their hands before and after touching the surfaces and touching food items (raw chicken).

Corrective action: Ensure all sanitizers are labelled with chemicals name and stored adequately.

-Display cooler at front (on right side) adequate - chicken probed at 1.7C.
-Stand-up freezer at front service area at -18C.
-Walk-in cooler adequate - chicken probed at 0.4C.
-All coolers have adequate thermometer.
-Walk in cooler has light guard.
-All food is kept off the ground and stored in a sanitary, organized manner.
-Has accurate thermometer.
-Beverage cooler at 4C.

Sanitation:
-Bleach sanitizer in bucket at 200ppm chlorine concentration.
-Hand washing station at service area adequate with liquid soap, hot and cold running water and single use paper towel.
-Hand washing sink in washroom (staff) adequate with liquid soap, hot and cold running water and single use paper towel.
-No signs of pests during time of inspection.
