Comments

- General sanitation still needs improvement in the areas noted on inspection report #DSOG-AMFSV8.
- The operator has purchased a new upright freezer/cooler to replace the broken cooler adjacent to the deep fryer. Once the appliance is working, provide a working thermometer inside the cooler. Begin a temperature log for all coolers. Temperature log template was provided to the operator.
- Cardboard was still being used on the floors. Educated the operator about the sanitary issues with using cardboard and recommended rubber mats instead.
Note: Ventilation hood is overdue for cleaning/maintenance. The operator informed that it is already scheduled for servicing next week. Follow the maintenance schedule accordingly.
