Observation (CORRECTED DURING INSPECTION): Dishwasher is not consistently reaching minimum water temperature for sanitizing dishware.
Corrective Action(s): Discussed temporary/emergency measures to follow until dishwasher repairs are completed:
Option 1) Visually-confirm wash temperature gauge is 75 degrees Celsius (or higher) prior to feeding each load of dishes into the machine.
Option 2) Manually-sanitize each load of dishware with a food-grade sanitizer solution (eg. 100ppm chlorine bleach/water solution) after washing in the dishwasher.
Option 3) Use single-service dishware/utensils for food-service until dishwasher repairs have been completed.
*Operator indicates that they plan to use option 1-->Ensure all dishwashing staff are informed of the emergency measure until dishwasher repairs have been completed.

Visually-inspect floors and surfaces in the food premises for mouse activity on a daily basis. Report all pest activity to the pest control technician for further action(s) (as needed).

Observation: Recently installed booster heater for dishwashing machine is not functioning.
Corrective Action(s): Service/repair the dishwashing machine. Operator indicates that the dishwasher repair company has been contacted and will be coming later today to inspect and repair the dishwasher.
