Observation: 1) Vegetable cutter metal plunger is broken and plastic components on the metal plunger are also broken off.
2) Cooler unit under grill door seal is broken and top cooler door does not close properly.
Corrective Action(s): 1) Replace both the metal plumber and plastic components. All equipment must be in good working order. Broken plunger and plastic parts may break off into food.
Correction date: 1 week
2) Replace cooler door seal to prevent loss of cold refrigeration air and to allow cooler door to close properly.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizing solution in the front area was not labelled.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. Sanitizer pail was labelled at the time of inspection. Ensure all containers are relabelled as needed.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Cooler unit under the grill area built in thermometer registered 23F - probe thermometer determined the cooler unit was at 3C/37F.
Corrective Action(s): Cold holding units must have accurate thermometers to verify proper temperatures are being achieved. Do not use the built in thermometer. As a reference, pure water freezes at 0C/32F.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Undercounter cooler was at 4C.
-Cooler unit under the grill was at 3C.
-Chest freezer was at -17C.
-Upright freezer was at -22C.
-Under counter freezer was at -18C.
-Temperatures checked and recorded daily.
-Cleaning and sanitizing carried out in 3-compartment sink. Bleach sanitizing solution prepared at 100ppm.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails tested at 200ppm.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Staff member completed FoodSafe Level 1 on March 24, 2018 and is waiting for certificate to arrive (letter of completion provided by instructor). FoodSafe Level 1 is valid until March 24, 2023.
