Observation (CORRECTED DURING INSPECTION): Soda wands in the bar were noted to have black mildew like substance built up in the dispensing cone

Observation: Minor rodent droppings noted in the following areas:
-dry storage room under shelves
-dry storage room around the mechanic's corner
-around the AV equipment in the bar
Corrective Action(s): ensure that the above noted areas are cleaned on a more frequent basis. Sanitize areas using a 100 ppm chlorine bleach solution.
Pest control is contracted weekly. Consistently showing no evidence of pest activity in the past few weeks - good

Observation: 2 issues:
-seafood area butchers block noted to have cracks and divots in the top cutting service
-dim sum area plastic wrap dispenser/holder had cracks and pieces broken off of it
Corrective Action(s): Re-surface the butchers blocks and fill cracks with food-grade epoxy. All food contact surfaces must be smooth, easy to clean, and non-absorbent.
Replace the plastic wrap dispenser/holder. Ensure that broken equipment is replaced

=All cooler units on site measured < 4 degrees C
=All freezer units on site measured < -18 degrees C
=Rice hot holding measured 67C at the time of inspection
=High temperature dishwasher had a final rinse temperature of 78.1 C at the dish surface (minimum 71 C required for proper sanitizing)
=Low temperature dishwasher measured 100 ppm chlorine at the glass surface (minimum 50 ppm chlorine required for proper sanitizing)
=Staff hygiene satisfactory at the time of inspection; assistant manager FOODSAFE level 2 certification verified, however, FS level 2 no longer is accepted as a FS1 alternative. discussed with assistant manager
=Permit was stored in a binder, ensure it is posted in a conspicuous location

note: some cleaning required around the pass in the dimsum area. Reviewed with assistant manager
note: several cans of pineapple in the dry storage was found to be bulging due to gas build up. Discard all dented/bulging cans in the dry storage. Do not use these cans for food service.
