301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Ice machine observed in unsanitary condition with mold/mildew on the filter. Staff turned off the ice machine during inspection to melt current supply of ice.
Corrective Action(s): Clean and sanitize the ice machine as per approved sanitation plan. Submit a photo of the clean and sanitized ice machine to the health inspector PRIOR to using the machine. Implement a regular cleaning and sanitizing schedule for the ice machine to ensure it is maintained in good sanitary condition.

Observation (CORRECTED DURING INSPECTION): QUATs sanitizer in bucket with wiping cloths measured at 0 ppm QUATs concentration with test strip. Staff prepared fresh sanitizer from the dispenser at the 2-compartment sink which measured at 200 ppm QUATs concentration during inspection.
Corrective Action(s): Prepare QUATs sanitizer daily (or as per approved sanitation plan) to sanitize all food contact surfaces and equipment throughout the day. Obtain QUATs sanitizer strips and verify sanitizer strength daily (or as per approved sanitation plan).

Observation: Hand washing station at front service area and in back dishwashing area is not supplied with paper towel in the dispenser. Soap dispensers are also not functioning.
Corrective Action(s): Place paper towel and liquid soap in all dispensers at designated hand washing stations immediately. Maintain all hand washing stations with adequate supply of hot and cold running water, liquid soap and paper towel AT ALL TIMES to ensure food handlers are washing their hands properly and to prevent food contamination.

Observation: Pest droppings observed in the following areas:
- Behind wire rack used to store equipment
- Behind the garbage can in the preparation area
Corrective Action(s): Remove rodent droppings wearing appropriate PPE. Wet the affected areas by sanitizing the areas with 1 part bleach to 10 parts water. Clean areas in contact with rodent droppings with water, detergent and disinfectant. Contact pest control company to conduct an inspection, assess, and apply further treatment as necessary. Continue to submit pest reports to the health inspector after each visit.

Observation: Multiple items observed stored directly on the floor (i.e. boxes, large menu sign and milk crates). Droppings observed behind and around these items.
Corrective Action(s): Remove all clutter and items which are placed directly on the floor to prevent further rodent entry/harbourage/breeding on site. Ensure all items are placed at least 6 inches off the floor.

- Gloves are NOT a replacement for proper, frequent hand washing. Gloves MUST be changed and hands must be adequately washed between different tasks
